The design and installation at the 270 cover Sharpys Fish & Chip Restaurant and Sports Bar was carried out by Fiswal.
The venue, which is adjacent to the DW Stadium in Wigan, was a challenging project for Fiswal as it involved converting a former Gym into a destination restaurant and bar capable of coping with big spikes in trade when matches are played at the stadium.
It features one of the largest frying ranges in a UK restaurant courtesy of a ten pan Kiremko set-up, which is supported by a kitchen, large prep areas and large cold room storage to maintain the constant stream of premium Cod that Sharpys fries.
Unusually the space allocated for the kitchens was generous so one of the key criteria was for an ergonomic design to enable staff to work at their station with a supply of refrigerated product at hand and to separate storage, preparation, cooking and cleaning into designated areas to minimise the chances of any cross contamination.
The restaurant and bar opened on schedule and on budget to the approval of Football and Rugby fans from across the country!
